Chickpea Cookie Dough

INGREDIENTS
- 1 Tin of Chickpeas
- 1/3 cup Oats (Gluten Free option)
- 12 Dates
- 3 tbsp Maple Syrup or Honey
- 1 tsp Vanilla Extract
- Handful of Chocolate Chips
Chocolate Coating:
- Melted dark Chocolate (dairy free option)
INSTRUCTIONS
- Add all ingredients except for the Chocolate Chips to a food processor and blend the ingredients until a dough texture is formed.
- Mix in the chocolate chips.
- Roll the dough into balls and place them on a tray
- Place the cookie dough in the freezer for 20-30 mins
- Melt the Chocolate and cover each ball with chocolate
- Place them back into the freezer or fridge until chocolate has set and store in the fridge
