WHAT YOU NEED

300g Medjool dates

200g Oats
-
Honey
-
Coconut Oil

Dark and White Chocolate ( You can use milk chocolate or a chocolate bar eg aero for flavour)

INGREDIENTS
BASE

200g Oats
-
3 tablespoons of maple syrup or honey
-
4 tablespoons Coconut Oil
-
6 Medjool dates
-
4 tablespoons Water
CARAMEL
-
The rest of the packet of 300g Medjool Dates

1 tablespoon Coconut Oil
-
6 tablespoon Water
-
1 tbsp Vanilla Extract
TOP LAYER
-
Vegan Dark Chocolate

¼ cup coconut Oil
-
Vegan White Chocolate for marble effect
INSTRUCTIONS

Prepare a baking tin with greaseproof paper.

Blend the Oats and 6 Dates in food processor.

Add in the Honey/Maple Syrup and Coconut Oil.

Spread the base ingredients in the prepared dish and press down with the back of a spoon to compact it.

Place in freezer to set while you make the caramel.

Blend the ingredients for the caramel: dates, coconut oil, water and vanilla extract.

Remove the base from the freezer and spread this mixture on top of the prepared base.

Melt the dark chocolate and spread evenly over caramel layer. Melt some white chocolate and drizzle it on top. Using a cocktail stick/ toothpick, run it up and down the melted chocolate in lines or do a swirling effect.

Place in freezer for 15 minutes or longer to harden.

When ready to cut, pour some boiling water in a bowl/round plate and dip a sharp knife in the hot water. Dry off with some kitchen roll and slice down to cut into squares. The heated knife allows you to slice through the chocolate.
